Bragging on God Today

You guys, I just want to take a moment and brag on what God has done for me and my family....

We (especially me) went through what felt like an eternity to us before reaching this part of our destination....and yet, here we are, living our dream!

I remember earnestly praying all day, every day for this exact moment. Sometimes I prayed with confidence and other times with mere faith. In fact, I remember praying about this as I was driving to work one day (as I did most days), and I remember declaring that we would have our house built AND I would be able to be a stay at home Mom at the same time. I declared it about 2 years ago. I declared that we would be able to live in our new house and that I would become a stay at home mom at the beginning of the summer in 2 years time....and here we are in our new home and I have had the crazy blessing of being a stay at home mom, and it all started at the beginning of this Summer AND right in the middle of a pandemic, might I add.

Did I still have doubts creep in within those 2 years of declaration? Oh, heck yes! In fact, we came very close to selling the land because of the constant setbacks, BUT, no matter how depressing it got, we still clung to the sliver of hope and promise that God was going to provide...and boy did He ever!...And, I’ve got a feeling that it’s only just the beginning.

Dirty skillet from making a BUNCH of pancakes to have for the next week; freshly washed dishes and the clean smell of soap, the bibs and paint that leave evidence of a fun childhood in the home; light breeze and fresh air through the open window; and the aroma of banana, raisin bread in the oven that fills the kitchen. These are all simple, and yet joyous little dreams come true!

Banana Raisin Bread

Ingredients:

3 medium Bananas
1/2 cup Honey or Sugar
1/4 cup Coconut Oil
1 Egg
1 1/2 cups Gluten Free or All-Purpose Flour
1 1/2 teaspoons Baking Powder
1/4 teaspoon Baking Soda
1 tablespoon Cinnamon (less if you’re not a fan of cinnamon)

Directions:

  • Preheat your oven to 350.
  • Mash your bananas. (I generally use bananas that are almost brown so they are nice and soft. I place them in the mixer and they mash while I’m getting the rest of the ingredients together.)
  • Add the egg, sugar (or honey) and cooking oil to your bananas.
  • Add the dry ingredients to your banana mixture and stir just until moistened.
  • Spray the bottom and sides of a loaf pan with cooking spray. Cook for 50-55 minutes, or until a cake tester (or toothpick) inserted in middle comes out clean.
  • Allow pan to cool for 10 minutes on a cooling rack.
  • To remove the bread from the pan, first run a butter knife around the edges of the bread (this will ensure that the bread isn’t stuck to the pan.) Turn the pan over onto your wire rack and your beautiful loaf of bread should come out clean as a whistle.
  • Allow your bread to fully cool on your wire rack.
  • **I added in the raisins after it was all combined.**

My teaching must be wearing off on him because he was able to tell me all the letters in “Huggies” and “snug & dry”, except for the “g” (he called it a “little a”) and the “&” sign. For a 2 year old to tell me what a lower case “d” is, that’s pretty special! #proudMomma
