Ingredients: 5 - chicken breast, boneless and skinless 1 - packet of taco seasoning 2 or 3 - assorted bell peppers, sliced or chopped 1 - tablespoon of onion powder 1-2 - tablespoons of olive oil 1/2 - cup of Shredded Mexican Cheese Directions:
*Since I didn't have a packet of taco seasoning at home, I made my own (which made it free!...SCORE!). Here's how to make your own: Ingredients: 1/2 - tablespoon of chili powder 1/4 - teaspoon of garlic powder 1/4 - teaspoon of oregano 1/2 - teaspoon paprika 1-1/2 - teaspoon of cumin 1 - teaspoon of black pepper Directions: Mix all ingredients above in a bowl.* *I had some pre-cut peppers in the fridge that needed to be eaten up before their due date, so I thought this recipe was perfect for that. Plus it made "chopping" them a lot easier since it was already done for me ;)*
*I can honestly say that when I took the chicken out of the oven I gasped at the sight of the burnt-look peppers and thought, "Ah man, I ruined dinner....again!" Reluctantly, we served our plates, sat down, said a "please let this be good" kind of prayer, picked up our fork, stabbed the chicken and "burnt" peppers with our fork, and took our first bite....oh my goodness were we wrong! It was DELICIOUS! I will DEFINITELY be making this dish again!!*
